Freeze drying is a method of gently removing moisture from liquid products by freezing them to temperatures as low as -72 °C. Typical freeze-dried articles in the food industry include instant products like coffee and sauces or dried fruits and fruit juice concentrates. 
 
Freeze drying extends the shelf life of the products and additionally results in considerable weight savings in connection with shipping. Pharmaceuticals, too, are dried in large freeze-drying systems and subsequently processed into tablets. Benchtop units are employed in connection with research and quality assurance in medical, physical and chemical laboratories.
